Those who have visited us, know how delicious the Vietnamese Pho (soup) can be, made by Huong or anyone in the street restaurants. Now I have got a recipe from my colleague Mr Cu, who is sharing his mother's recipe to me (and all of you).

Ingredients:
Beef bone
1 (1/4-inch thick) slice ginger
2 whole star anise
1 cinnamon stick
1/2 pound piece boneless beef sirloin, trimmed of any fat
3 ounces fresh rice noodles
1/4 cup fish sauce
1/8 teaspoon freshly ground black pepper
1/8 cup minced scallions


Instructions:
1. Bring beef bone to boil, then simmer for two hours.  Add ginger, star anise and cinnamon.
2. Stir in fish sauce and salt.  Skim any froth from soup.
3. Cut sirloin across the grain into very thin slices using a sharp knife.
4. Cook noodles in boiling water and stir.  Drain noodles in a colander.  Set aside.
5. To serve, divide noodles into four bowls.  Put sirloin slices in a big spoon and soak in boiling broth.  Ladle soup over noodles.  Sprinkle scallion greens and basil over soup and serve with lime wedges.
